Beach Street Lemon Chicken

Ingredients
  

Add to Freezer Bag:

  • 1.5 lb Chicken Breasts cut into 1" chunks or stripes
  • 2 Lemon zested (1-2 tsp.) and juiced
  • 2 Green Onions finely chopped (white and green parts)
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup Low Sodium Soy Sauce
  • 2 tbsp Brown Sugar
  • 1 tbsp Garlic minced
  • 1 tbsp Parsley
  • 1-3 tsp Cajun Seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions
 

To Freeze and Cook Later:

  • Label your freezer bag with the name of the recipe, cooking instructions, and date.
  • Add all ingredients to the freezer bag.
  • Carefully remove as much air as possible, seal and freeze for up to three months.

Stove-Top:

  • Allow meal to thaw overnight in the fridge.
  • Over medium-high heat, add thawed contents of freezer bag to a large skillet.
  • Cook until chicken is cooked through and reaches an internal temperature of 165F, about 7-10 minutes.

Slow Cooker:

  • Empty frozen contents of bag into a slow cooker.
  • Cook on low for 3-4 hours, or to an internal temperature of 165F.

Pressure Cooker:

  • Empty frozen contents of bag into a pressure cooker, add 1/4 cup liquid.
  • Turn the pressure to high and cook for 15 minutes, natural pressure release.

Serving Suggestions:

  • Stir in 16 oz of cooked Linguine (8 oz uncooked) and top with parmesan cheese and chives.
  • Serve with your favorite non-starchy vegetable or a side salad. Can also serve over rice or quinoa.
