EQUIPMENT
1 Gallon Freezer Bag
Ingredients
Add to Gallon Freezer Bag:
- 1 1/2 lb Chicken Breasts or thighs
- 1 (15 oz) can Unsweetened Coconut Milk shake well
- 1 (6 oz) can Tomato Paste
- 1 tbsp Ginger Paste
- 2 tsp Minced Garlic
- 1 tbsp Brown sugar
- 1 1/2 tsp Chili Powder
- 1 tbsp Garam Masala
- 1 tsp Curry Powder
- 1 tsp Onion Powder
- 1 tsp Salt
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the name of the recipe, cooking instructions, and date.
- Add all ingredients to the freezer bag.
- Carefully remove as much air as possible, seal and freeze for up to three months
Slow Cooker:
- Empty the thawed contents of the bag into a slow cooker.
- Cook on low for 4-5 hours, or to an internal temperature of 165F.
Pressure Cooker:
- Empty the frozen contents of the bag into a pressure cooker and add 1/4 cup liquid.
- Turn the pressure to high and cook for 20 minutes, quick pressure release.
Additional Instructions:
- Shred chicken and return to pot. Allow the meal to sit for a few minutes before serving.
- Top with fresh cilantro and serve over rice with naan bread and a side of veggies.
- *Note: Want more veggies? Add some carrots, diced potatoes, and/or broccoli to the pot and let them cook with the meal.
