Ingredients
  

Add to Freezer Bag:

  • 1 lb Chicken Breasts
  • 1 (15 oz) can Diced Tomatoes 15 oz
  • 1/2 cup Low-Sodium Chicken Broth
  • 1 cup Baby Spinach chopped
  • 1/4 cup Parmesan Cheese Grated
  • 1/2 tbsp Extra Virgin Olive Oil extra virgin
  • 2 tsp Garlic minced
  • 1/2 tbsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/8 tsp Crushed Red Pepper Flakes

Add After Cooking:

  • 4 oz Greek or Low-Fat Cream Cheese
  • 8 oz Pasta, uncooked Penne or another of your favorites

Instructions
 

To Freeze and Cook Later:

  • Label your freezer bag with the recipe's name, cooking instructions, and date.
  • Add all ingredients to the freezer bag EXCEPT cream cheese and penne noodles.
  • Carefully remove as much air as possible, seal and freeze for up to three months.

Stove Top:

  • Allow meal to thaw overnight in the fridge, OR in the sink submerged in cold water.
  • Add thawed contents of freezer bag to large skillet or pot with 4 oz of cream cheese.
  • Over medium heat, bring to boil and then simmer for 10-15 minutes, stirring occasionally until chicken is cooked through.

Slow Cooker:

  • Empty frozen contents of bag into slow cooker.
  • Cook on low 3-4 hrs, or to internal temperature of 165 F.

Pressure Cooker:

  • Empty frozen contents of bag into a pressure cooker, add 1/4 cup liquid.
  • Turn the pressure to high and cook for 20 minutes, quick pressure release.

Additional Instructions:

  • Cook 8 oz Pasta, uncooked noodles according to package direction
  • Shred chicken and return to pot.
  • Add 4 oz Greek or Low-Fat Cream Cheese and mix until well combined.
  • Allow the meal to cook or sit on a warm setting for an additional 5-10 minutes so that the chicken and noodles can soak up some of the juices.
  • Serve with a side of dark green salad.
