EQUIPMENT

1 Snack Bag

Ingredients

  • 1 loaf Sourdough Bread or Brioche, challah, or french
  • 8 Eggs
  • 1 1/2 cups Milk
  • 1/2 cup Plain, Non-Fat Greek Yogurt
  • 1 tbsp Vanilla Extract
  • 1/4 cup Maple syrup
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Salt

Topping (Optional):

  • 2 tbsp Unsalted Butter or coconut oil, melted
  • 2 tbsp Brown Sugar
  • 1/2 cup Chopped Pecans
  • 1/2 tsp Cinnamon

Instructions

To Freeze and Cook Later:

  • Cut the bread into 1-inch cubes and scatter evenly in a greased 9x13-inch aluminum pan (for freezing) or baking dish.
  • In a medium bowl, whisk together the eggs, milk, Greek yogurt, maple syrup, vanilla, cinnamon, and salt. Pour the mixture evenly over the bread cubes. Press the bread down gently with a spatula so it soaks up the liquid.
  • Cover the casserole tightly with aluminum foil.
  • Optional Topping: In a small bowl, mix the melted butter with chopped pecans, brown sugar, and cinnamon. Transfer the topping to a small resealable plastic bag (can tape to foil so it doesn't get lost).
  • Refrigerate for at least 4 hours or overnight before cooking, or freeze for up to three months.

To Bake:

  • If frozen, transfer the casserole to the fridge to thaw overnight.
  • Preheat Oven to 375°F
  • Add the Topping: Open the plastic bag and sprinkle the nut topping evenly over the casserole.
  • Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 25–45 minutes, or until the casserole is golden and cooked through, reaching an internal temperature of 165°F. (Cook time will vary based on your baking dish and how thawed the casserole is.)
  • Serving Suggestions: Drizzle with maple syrup and top with your favorite berries, if desired.
