EQUIPMENT

1 Gallon Freezer Bag

Ingredients
  

Add to Gallon Freezer Bag:

  • 2 large Carrots diced
  • 1 Celery Stick diced
  • 1/2 cup Diced Onion
  • 1 (15 oz) can Cannellini Beans drained
  • 1/2 cup Baby Spinach about 1 handful, roughly chopped
  • 4 tsp Vegetable Bouillon Base *Recommend Better Than Bouillon Vegetable Base
  • 2 tsp Minced Garlic
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Add Day of Cooking:

  • 4 cups Water
  • 4 oz Low Fat Cream Cheese
  • 12 oz Frozen Tortellini

Instructions
 

To Freeze and Cook Later:

  • Label your freezer bag with the recipe's name, cooking instructions, and date.
  • Add all ingredients to the freezer bag EXCEPT water, tortellini and cream cheese.
  • Carefully remove as much air as possible, seal and freeze for up to three months.

Slow Cooker:

  • Empty the thawed contents of the bag into a slow cooker.
  • Add 4 cups Water and cook on low for 3-4 hours until veggies have softened.
  • Add 4 oz Low Fat Cream Cheese to soup and stir until melted.
  • Add in 12 oz Frozen Tortellini and allow to simmer 10-15 more minutes

Pressure Cooker:

  • Empty the frozen contents of the bag into a pressure cooker and add 4 cups Water.
  • Turn the pressure to high and cook for 8 minutes, natural pressure release.
  • Switch to saute setting and add 4 oz Low Fat Cream Cheese and 12 oz Frozen Tortellini.
  • Stir until heated through and cream cheese is melted, about 5 minutes.

Serving Suggestions:

  • Top with parmesan cheese and serve with warm bread.
