Creamy Veggie Tortellini Soup
A cozy and hearty soup, this vegetarian Creamy Tortellini Soup is the perfect way to end a chilly day with layers of flavor in every bite, with tender veggies and creamy cheese tortellini in a flavorful cream base.
EQUIPMENT
1 Gallon Freezer Bag
Ingredients
Add to Gallon Freezer Bag:
- 2 large Carrots diced
- 1 Celery Stick diced
- 1/2 cup Diced Onion
- 1 (15 oz) can Cannellini Beans drained
- 1/2 cup Baby Spinach about 1 handful, roughly chopped
- 4 tsp Vegetable Bouillon Base *Recommend Better Than Bouillon Vegetable Base
- 2 tsp Minced Garlic
- 1/4 tsp Crushed Red Pepper Flakes
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
Add Day of Cooking:
- 4 cups Water
- 4 oz Low Fat Cream Cheese
- 12 oz Frozen Tortellini
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the recipe's name, cooking instructions, and date.
- Add all ingredients to the freezer bag EXCEPT water, tortellini and cream cheese.
- Carefully remove as much air as possible, seal and freeze for up to three months.
Slow Cooker:
- Empty the thawed contents of the bag into a slow cooker.
- Add 4 cups Water and cook on low for 3-4 hours until veggies have softened.
- Add 4 oz Low Fat Cream Cheese to soup and stir until melted.
- Add in 12 oz Frozen Tortellini and allow to simmer 10-15 more minutes
Pressure Cooker:
- Empty the frozen contents of the bag into a pressure cooker and add 4 cups Water.
- Turn the pressure to high and cook for 8 minutes, natural pressure release.
- Switch to saute setting and add 4 oz Low Fat Cream Cheese and 12 oz Frozen Tortellini.
- Stir until heated through and cream cheese is melted, about 5 minutes.
Serving Suggestions:
- Top with parmesan cheese and serve with warm bread.
