Lemon Chicken Orzo Soup

Ingredients
  

Add to Freezer Bag:

  • 1 lb Chicken Breasts
  • 2 Carrots peeled and finely diced
  • 2 Celery Stalk diced
  • 1 Lemon zested and juiced
  • 1/4 cup Diced Onion
  • 4 tsp Chicken Bouillon Base *recommend Better Than Bouillon
  • 1 tsp Garlic minced
  • 1 Bay Leaves
  • 1/2 tsp Oregano
  • 1/2 tsp Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Add to Pot Before Cooking:

  • 4 cups Water

Add After Cooking:

  • 3/4 cup Orzo Pasta dried

Instructions
 

To Freeze and Cook Later:

  • Label your freezer bag with the recipe's name, cooking instructions, and date.
  • Add all ingredients to the freezer bag, EXCEPT water and Orzo pasta.
  • Carefully remove as much air as possible, seal, and freeze for up to three months.

Slow Cooker:

  • Empty the frozen contents of the bag into a slow cooker.
  • Add 4 cups of water. Cook on low for 3-4 hours, or to an internal temperature of 165F.

Pressure Cooker:

  • Empty the frozen contents of the bag into a pressure cooker and add 4 cups of water.
  • Turn the pressure to high and cook for 15 minutes, with quick pressure release. *If chicken isn't cooked through after 15 min, shred and return to pressure cooker on saute setting.

Additional Instructions:

  • Remove bay leaf.
  • Shred chicken and return to liquid.
  • Cook orzo pasta according to package directions and add to pot.

Serving Suggestions:

  • Top with lemon wedges or fresh parsley for garnish.
  • Serve with a large piece of sourdough or french bread.
