Cooking Method Slow Cooker, Pressure Cooker
Protien Type Chicken
Servings 4 people
EQUIPMENT
1 Gallon Freezer Bag
Ingredients
Add to Gallon Freezer Bag:
- 1 lb Chicken Breasts
- 1 (15 oz) can Diced Tomatoes
- 1 (15 oz) can Black Beans drained
- 1/2 cup Frozen Corn
- 1/2 cup BBQ Sauce
- 1/2 tsp Onion Powder
- 1/2 tsp Chili Powder
- 1/2 tsp Salt
Add Day of Cooking:
- 1/2 cup Monterey Jack Cheese
- 8 oz Pasta, uncooked Rotini or another of your favorites
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the name of the recipe, cooking instructions, and date.
- Add all ingredients to the freezer bag.
- Carefully remove as much air as possible, seal, and freeze for up to three months.
Slow Cooker:
- Empty the thawed contents of the bag into a slow cooker.
- Cook on low for 4-6 hours or on high for 3-4 hours until the internal temperature reaches 165F.
Pressure Cooker:
- Empty the frozen contents of the bag into a pressure cooker, and add 1/4 cup liquid.
- Turn the pressure to high and cook for 20 minutes, with quick pressure release.
Additional Instructions:
- Cook noodles according to package directions.
- Shred chicken and return to liquid.
- Add noodles and cheese to the pot. Mix well. Replace the lid and let it cook an additional 5-10 minutes before serving.
Serving Suggestions:
- Top with additional cheese and bacon bits and serve with a fresh garden salad.
- This meal can also be served chilled as a pasta salad.
