Ingredients
  

Add to Freezer Bag:

  • 1 lb Chicken Breasts
  • 1 Red Bell Pepper diced
  • 1 Zucchini diced
  • 1 Lime juiced
  • 1/2 (15 oz) can Light Unsweetened Coconut Milk shake well
  • 1/3 cup Creamy Peanut Butter
  • 1/8 cup Honey
  • 1/8 cup Low Sodium Soy Sauce
  • 2 tsp Garlic minced
  • 1 tsp Sriracha
  • 1 tsp Ginger Paste
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions
 

To Freeze and Cook Later:

  • Label your freezer bag with the recipes name, cooking instructions, and date.
  • Add all ingredients to the freezer bag.
  • Carefully remove as much air as possible, seal, and freeze for up to three months.

Slow Cooker:

  • Empty the frozen contents of the bag into a slow cooker.
  • Cook on low for 4-5 hours or to an internal temperature of 165F.

Pressure Cooker:

  • Empty the frozen contents of the bag into a pressure cooker, and add 1/4 cup of liquid.
  • Turn the pressure to high and cook for 20 minutes with quick pressure release.

Additional Instructions:

  • Shred chicken and return to liquid. Allow the meat to sit for a few minutes before serving.
  • Serve over rice or rice noodles. Top with crushed peanuts, a squeeze of lime juice, and fresh cilantro.
