Ingredients
Add to Freezer Bag:
- 1 lb Chicken Breasts
- 1 Red Bell Pepper diced
- 1 Zucchini diced
- 1 Lime juiced
- 1/2 (15 oz) can Light Unsweetened Coconut Milk shake well
- 1/3 cup Creamy Peanut Butter
- 1/8 cup Honey
- 1/8 cup Low Sodium Soy Sauce
- 2 tsp Garlic minced
- 1 tsp Sriracha
- 1 tsp Ginger Paste
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the recipes name, cooking instructions, and date.
- Add all ingredients to the freezer bag.
- Carefully remove as much air as possible, seal, and freeze for up to three months.
Slow Cooker:
- Empty the frozen contents of the bag into a slow cooker.
- Cook on low for 4-5 hours or to an internal temperature of 165F.
Pressure Cooker:
- Empty the frozen contents of the bag into a pressure cooker, and add 1/4 cup of liquid.
- Turn the pressure to high and cook for 20 minutes with quick pressure release.
Additional Instructions:
- Shred chicken and return to liquid. Allow the meat to sit for a few minutes before serving.
- Serve over rice or rice noodles. Top with crushed peanuts, a squeeze of lime juice, and fresh cilantro.
