White Bean Chili
This must-try White Bean Chili is perfect for any season, that's both flavorful and filling, and can be enjoyed year-round. This easy-to-make chili boasts a delicious combination of ingredients that create a comforting and satisfying meal option.
EQUIPMENT
1 Gallon Freezer Bag
Ingredients
Add to Gallon Freezer Bag:
- 1 lb Chicken Breasts
- 3 (15 oz) cans Great Northern Beans
- 2 cups Low-Sodium Chicken Broth
- 1 (4.5 oz) can Diced Green Chilies
- 1 Red Bell Pepper diced
- 1 Jalapeno deseeded and diced OR thrown in whole with a 1/2" slit
- 1/2 cup Diced Onion
- 1 tsp Minced Garlic
- 2 tsp Cumin
- 1/2 tsp Oregano
- 1 tsp Salt
Add Day of Cooking:
- 1/2 cup Sour Cream OR plain, non-fat Greek Yogurt
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the name of the recipe, cooking instructions, and date.
- Add all ingredients to the freezer bag EXCEPT 1/2 cup Sour Cream.
- Carefully remove as much air as possible, seal and freeze for up to three months.
Slow Cooker:
- Empty the thawed contents of the bag into a slow cooker.
- Cook on low for 4-6 hours or on high for 3-4 hours until the internal temperature reaches 165F.
Pressure Cooker:
- Empty the frozen contents of the bag into a pressure cooker and add 1/4 cup liquid.
- Turn the pressure to high and cook for 20 minutes, quick pressure release.
Additional Instructions:
- Shred chicken and return to liquid. Add 1/2 cup Sour Cream and mix.
- Serve topped with cheese, avocado, tortilla chips and other favorite toppings.
