Janelle’s Mediterranean Lentil Chili
Loaded with fiber and protein, this Mediterranean Lentil Chili is a flavorful, gut-friendly twist on a classic comfort dish. A warm and hearty meal that nourishes your body while satisfying your taste buds!
EQUIPMENT
1 Gallon Freezer Bag
Ingredients
Add to Gallon Freezer Bag:
- 1 lb Extra Lean Ground Beef
- 1 (15 oz) can Crushed Tomatoes
- 1 (15 oz) can Red Kidney Beans drained and rinsed
- 1 cup Beef Bone Broth
- 1/2 cup Dried Brown Lentils rinsed
- 1 Red Bell Pepper diced
- 1/4 cup Diced Onion
- 1 tbsp Minced Garlic
- 1 tsp Cumin
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Oregano
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the name of the recipe, cooking instructions, and date.
- Add all ingredients to the freezer bag.
- Carefully remove as much air as possible, seal, and freeze for up to three months
Slow Cooker:
- Empty the thawed contents of the bag into a slow cooker. Cook on low for 4-6 hours.
- Break up the beef, return it to the pot, and mix well. Let the chili sit for a few minutes before serving
Serving Suggestions:
- Top with avocado, cheese, sour cream, diced tomatoes, and other favorite toppings. Serve with chips or warm cornbread.
