Sheet Pan Greek Chicken
Get ready for a flavor-packed, one-pan meal with this Greek sheet pan chicken recipe. Tender chicken and caramelized veggies make for a delicious and healthy dinner.
EQUIPMENT
1 Gallon Freezer Bag
Ingredients
Add to Gallon Freezer Bag:
- 1.5 lb Chicken Breasts sliced so they all have similar thickness
- 1 Red Bell Pepper 1" chunks
- 1 Yellow Bell Pepper 1" chunks
- 1 Red Onion sliced into wedges
- 1/2 cup Cherry Tomatoes
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Balsamic Vinegar
- 1/2 tbsp Lemon Juice
- 2 tsp Minced Garlic
- 1 tsp Paprika
- 1 tsp Oregano
- 1 tsp Dried Basil
Add Day of Cooking:
- 1/4 cup Crumbled Low-Fat Feta Cheese
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the name of the recipe, cooking instructions, and date.
- Add all ingredients to the freezer bag EXCEPT 1/4 cup Crumbled Low-Fat Feta Cheese.
- Carefully remove as much air as possible, seal and freeze for up to three months.
Sheet Pan:
- Thaw the meal overnight in the fridge.
- Preheat oven to 400F. Line a baking sheet pan with aluminum foil, empty contents of the bag onto the pan and spread out evenly.
- Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165F and veggies are tender mixing/flipping contents halfway through.
Additional Instructions:
- Sprinkle 1/4 cup Crumbled Low-Fat Feta Cheese over the top of the chicken and vegetables.
- Serve over rice or quinoa.
