EQUIPMENT

1 Gallon Freezer Bag

Ingredients
  

Add to Gallon Freezer Bag:

  • 1.5 lb Chicken Breasts sliced so they all have similar thickness
  • 1 Red Bell Pepper 1" chunks
  • 1 Yellow Bell Pepper 1" chunks
  • 1 Red Onion sliced into wedges
  • 1/2 cup Cherry Tomatoes
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 1/2 tbsp Lemon Juice
  • 2 tsp Minced Garlic
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 tsp Dried Basil

Add Day of Cooking:

  • 1/4 cup Crumbled Low-Fat Feta Cheese

Instructions
 

To Freeze and Cook Later:

  • Label your freezer bag with the name of the recipe, cooking instructions, and date.
  • Add all ingredients to the freezer bag EXCEPT 1/4 cup Crumbled Low-Fat Feta Cheese.
  • Carefully remove as much air as possible, seal and freeze for up to three months.

Sheet Pan:

  • Thaw the meal overnight in the fridge.
  • Preheat oven to 400F. Line a baking sheet pan with aluminum foil, empty contents of the bag onto the pan and spread out evenly.
  • Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165F and veggies are tender mixing/flipping contents halfway through.

Additional Instructions:

  • Sprinkle 1/4 cup Crumbled Low-Fat Feta Cheese over the top of the chicken and vegetables.
  • Serve over rice or quinoa.
