Chickpea Noodle Soup

EQUIPMENT
1 Gallon Freezer Bag
Ingredients
Add to Gallon Freezer Bag:
- 2 (15 oz) cans Garbanzo Beans
- 3 Celery Stick Diced
- 3 Carrots Diced
- 1/2 cup Diced Onion
- 1 tbsp Minced Garlic
- 4 tsp Vegetable Bouillon Base
- 1 Bay Leaves
- 1/2 tbsp Parsley
- 1/2 tsp Thyme
- 1/2 tsp Black Pepper
- 1/2 tsp Salt
Add Day of Cooking:
- 4 cups Water
- 6 oz Egg Noodles
Instructions
To Freeze and Cook Later:
- Label your freezer bag with the recipe's name, cooking instructions, and date.
- Add all ingredients to the freezer bag, EXCEPT 4 cups Water and 6 oz Egg Noodles.
- Carefully remove as much air as possible, seal, and freeze for up to three months.
Slow Cooker:
- Empty frozen contents of the bag into a slow cooker and add 4 cups Water.
- Cook on low for 3-4 hours, until beans and veggies are soft.
Pressure Cooker:
- Empty the frozen contents of the bag into a pressure cooker and add 4 cups Water.
- Turn the pressure to high and cook for 5 minutes, with a 5 minute natural pressure release.
Additional Instructions:
- Remove the bay leaf.
- Cook 6 oz Egg Noodles according to package directions and add to pot.
Serving Suggestions:
- Top with lemon wedges or fresh parsley for garnish.
- Serve with garlic bread or grilled cheese sandwiches.
